The Famous O’Henry Bars

Ok everyone,

Here is the of most wonderful barcookie recipes I have ever used! My dearest and oldest friend Katie Parrish Bassham shared this with me years ago. It has been a favorite of my boys for years. So easy and is good for you I say!!:)

OVEN 350

4 CUPS OATMEAL

1/2 CUP GRANULATED SUGAR  (I use raw sugar but it makes no difference in the outcome of the recipe)

1 CUP PACKED BROWN SUGAR

2 CUBES MARGARINE OR BUTTER MELTED ( I use butter:) )

Add dry ingredients to the melted butter, mixing well and press into a 9X13 pan.

BAKE 15 min.

Cool 20 min.

Melt 1cup crunchy peanutbutter with 1 cup semisweet chocolate chips

spread over top of oatmeal crust…cool in refrigerator till firm  If I am in a hurry I put it in the deep freeze for 15 min or so but not too long because the chocolate can cloud white. Cut into bitesize or size of your choice. I wrap in plastic wrap or put in a tupperwear container….CAUTION BE SURE TO HIDE A PIECE FOR YOURSELF< WHEN YOU GO TO GET YOUR PIECE IT WILL ALL BE GONE!!!…..

Awesome to Know that even though we may not know where we are going, God does ……we just need to follow!

The past few weeks I have been trying a new eating plan to see if it helps with my fibromyalgia. I have made some really yummy salads and low fat dressings and would like you to try them too.

Dressing first.

1/2 Cup Low fat mayo  (4.5% fat)

1/2 Red Onion finely chopped

1 teaspoon sweet mustard

and enough applejuice to make a thin dressing

of course you can make it as thin or thick as you desire  by adding more or less applejuice.

a little salt and pepper

Put in fridge to marinate

You could even use this as a dip. I put it on potatoes too.

This salad you can really have fun with.

1/2 head purple cabbage….chopped or shredded

2 cups baby spinach                            1 chopped tomato

1/2 sweet red pepper                          1/2  avacado chopped

1/2 cucumber chopped                          1/4 cup toasted almonds

1/2 red onion chopped or rings               1 orange cut in chunks

Toss together.. Add dressing

I added chicken and used it for dinner along with toasted heavy wheat bread.

Shrimp would be good in this instead of the chicken..or a shredded cheese.

I also made it using a cup of cooked bulger…humm would probably taste fatastic with wildrice!…SEE I told you  you could have fun with this salad!

I Love so much to cook! My mama was such a good cook! She could make a wonderful meal out of  anything she found in the cupboard. A true Proverbs woman..And she enjoyed  cooking and loved being a wife and our mama.

I wonder if maybe she is cooking in Heaven?….Miss you mama !
